This is Ken-san who was our sushi chef for a fantastic omakase dinner @ Kusakabe. He was super chatty and in tune with the best ways to promote social media sharing of the noms at the restaurant. The last thing he said, aside from slow torching the fish for this photo, “Slow mo with the fire is really cool”. Also cameo in this shot from Hoiling at the far end of the bar.
